Ada event asyik nih. Red & White Foodie Photography Contest. Yang diselenggarakan oleh DhiFitriDwi.

Iseng-iseng ikutan ahh..ada hadiahnya lho..asyik-asyik lagi..:-)

Makasi ya Dhi – Fitri – Dwi, yang dah mau cape-cape ngadain event ini. Tema yang asyik banget, di saat yang tepat:-)

Tadinya sempet mo bikin British Summer Pudding a la Gordon Ramsay. Trus ganti lagi ama triffle. Trus ganti lagi ama Strawberry & Coconut Cupcakes ini.

Sutralah..seperti kata pihak penyelenggara, menang itu bukanlah segalanya..but having fun is.

Walo demikian, tetep komat-kamit deh baca doa kikikikik…

So..ini entry gue utk Red & White event ini. Bingung juga mo milih foto yang mana yg diikutsertakan. Akhirnya gue pilih foto yang ini ajah:-)

Resep gue dapet dari buku 500 Cupcakes & Muffin karya Fergal Connolly. Rasanya hmm padat seperti muffin. Ngenyangin deh..oya, raspberry gue ganti ama strawberry..

Mini Raspberry & Coconut Cupcakes

Red n White

The inspiration for thes cupcakes came from the classic English Bakewell tart.

3 tbsp ground almonds
40 g dessicated coconut
175 g icing sugar, sieved
200 g plain flour
1 tsp baking powder
115 g unsalted butter, melted
5 egg whites
115 g fresh or thawed, fron raspberries
2 tbsp dessicated coconut, to finish

Preheat the oven to 190°C (375°F/Gas mark 5). Place 24 mini ceramic baking cases on a baking tray.
In a large bowl, combine the ground almonds, coconut, icing sugar, flour, and baking powder. Stir in the butter, followed by the egg whites.
Spoon the mixture into the cases. Drop a raspberry and a little dessicated coconut on top of each cupcake. Bake for 12 to 15 minutes. Remove the cases from the oven and cool for 5 minutes. Then remove the cupcakes and cool on a rack.
Store in an airtight for up to 2 days, or freeze in a sealed container for up to 3 months.

Makes 2 dozen.
